Dinners: Follow-Up.

Per your request, I’ll start including recipes or details with my “dinners” posts! For now, here’s one meal that got a few requests. This was incredibly simple. I went with thin whole wheat spaghetti, but pretty much any pasta you have on hand would work. While water heats up, trim/wash brussel sprouts. Toss in olive oil and spices of your choosing (I usually go for garlic powder, red pepper flakes, pepper, seasoned salt…). Put brussel sprouts, along with sliced chicken sausage (again, any flavor should be good—the kind I find is always pre-cooked) on a baking sheet lined with aluminum foil. I usually start with 400 degrees and 20 minutes—-might take more like 30 minutes. I honestly just keep an eye on them. It’s not a very temperatmental process, in my experiences—a few extra minutes, etc, is no big deal. When pasta’s done, toss in olive oil. Combine with roasted brussel sprouts/chicken and top with crumbled goat cheese (or feta—Mmm!). Enjoy! If there are any other dinners you’re wondering about, I’d be happy to share!
