I Love Crepes.

Pierre & Ginessa have jokingly been pushing for me to stay with them while in Milwaukee, enticing me with fresh crepes and baguettes (no culinary bribes necessary, but I sure was excited!). After our run, Ginessa suggested a stop at the market to pick up some essentials (goat cheese & feta, raspberries) and my hosts more than delivered! Ginessa even awesomely made this egg-hating girl a filling with just cheese, spinach, onion, sun dried tomatoes…and it was heavenly! We had leftovers the next day.

Their recipe was from the motherland–Pierre is from France, and his grandmother gifted a lovely cookbook—but on Monday I couldn’t resist trying ’em out myself. I went for this recipe and mixed in spinach, feta, and roasted chicken sausage (topped with some fresh tomatoes, goat cheese spread onto the crepe) for dinner. For breakfast? Lemon yogurt & raspberries. Dessert? A little chocolate ice cream, raspberries, whipped cream.

Suspect this will become a part of the recipe rotation. YUM. Love the idea of tossing pretty much anything in there and calling it a meal.
